Did someone say Coffee Cake? :)

Tomorrow morning our guests will be humbled with an amazing Coffee cafe to savor the taste buds of any breakfast event.  Want the recipe?  Well here you go!

The Cake:

1/2 cup of unsalted butter

1 cup of sugar

2 eggs

3/4 cup of sour cream

1 teaspoon of Vanilla Extract

1 3/4 cups of flour

1 teaspoon of baking powder

A pinch of Salt and Baking Soda

The Streusel:

1/2 cup of Brown Sugar

1/2 cup of Flour

1/2 cup of Unsalted Butter

A Pinch of Salt

3 Teaspoons of Ground Cinnamon/or Cocoa Powder

First we can make the cake batter.  Mix the butter and sugar for about 5 minutes until creamed.  Next, add one egg at a time and mix into batter thoroughly.  Then add Vanilla and Sour Cream into batter.  In a SEPARATE BOWL, sift together the flour, baking soda and baking powder and salt.  Finally, take the flour mixture and pour into the batter and mix thoroughly.

Now for the Streusel mix:  Take the dry ingrediants (Flour, Sugar, Cocoa or Cinnimon (which ever you chose) ) and mix.  Add the butter and mix well.

Place half of the batter layered into a 9×5 greased pan.  add 1/2 of the streusel mix on top of the first half of batter.  Next add the remaining portion of the batter to the pan.  Finally finish off the streusel mixture on top of the remaining batter on the pan.

Bake for 30-45 minutes on 350 degrees.

Orange-Blueberry Cake!

I found this to be a great recipe for a quick morning snack at the breakfast table.  Orange and Blueberry Cake was actually meant to be made with Dried Cranberries, but i found a substitute of frozen blueberries to work just as great! What you’ll need:

3/4 Cups of unsalted butter

3/4 Cups of sugar

2 eggs

1/2 cup of Orange Juice

1/2 cup of Sour Cream

1 table spoon of freshly graded orange zest

1 teaspoon for Vanilla extract

2 cups of flour

1/2 table spoon of baking power

a pinch of salt

3/4 cups of Blueberries

Mix dry ingredients (Flour, Baking Power and Salt) first.  In a separate bowl take your butter and sugar and mix to a creamy texture.  Next, add eggs one at a time ensuring each one mixes well.  Then, take your sour cream, vanilla and orange zest and mix well into the batter.  Lastly, you will take the flour mixture you set aside earlier and add the batters together with the blueberries as well.  Don’t over mix, you just want the flour mixed in just right.  Grease a 9×5 baking pan, or 6 cup large cup cake pan,  and set your oven to 330 degrees.  Takes about 45 minutes depending on your oven.
