Egg and Ham Croissant

Here is one of our delicious “breakfast special”: the Egg and Ham Croissant! French are very well known to deep their croissant into a cup of coffee or milk but they also like to “stuff” their croissant too and eat like a main dish :)

Here what you need for 1 croissant:

Time to prepare: 15 minutes

  • 1 croissant slices in two
  • 1 egg
  • 1 slice of ham
  • 2 slice of Swiss cheese
  • 2 tablespoons of butter

Directions:

Heat broiler. Spread 2 teaspoons butter on bottom half of each croissant; place buttered-side up on baking sheet. Broil 5 to 7 inches from heat until light golden brown (1 to 2 minutes).

Top each toasted croissant half with 1 slice cheese and 1/2 of ham. Continue broiling until cheese is melted (1 to 2 minutes).

Place 1 poached egg and 1 slice cheese over ham on 1 side of the croissant. Continue broiling until cheese is melted (1 minute). Sprinkle with dill; top each with remaining croissant half.

Orange-Blueberry Cake!

I found this to be a great recipe for a quick morning snack at the breakfast table.  Orange and Blueberry Cake was actually meant to be made with Dried Cranberries, but i found a substitute of frozen blueberries to work just as great! What you’ll need:

3/4 Cups of unsalted butter

3/4 Cups of sugar

2 eggs

1/2 cup of Orange Juice

1/2 cup of Sour Cream

1 table spoon of freshly graded orange zest

1 teaspoon for Vanilla extract

2 cups of flour

1/2 table spoon of baking power

a pinch of salt

3/4 cups of Blueberries

Mix dry ingredients (Flour, Baking Power and Salt) first.  In a separate bowl take your butter and sugar and mix to a creamy texture.  Next, add eggs one at a time ensuring each one mixes well.  Then, take your sour cream, vanilla and orange zest and mix well into the batter.  Lastly, you will take the flour mixture you set aside earlier and add the batters together with the blueberries as well.  Don’t over mix, you just want the flour mixed in just right.  Grease a 9×5 baking pan, or 6 cup large cup cake pan,  and set your oven to 330 degrees.  Takes about 45 minutes depending on your oven.

American Guest House Breakfast Menu Recipes

Looking for a Quick Crepe Recipe?

A twist in a traditional American breakfast could use a batter of Crepe mix. All you need is some flour, eggs, milk and a hint of oil and salt.

A recipe I found to be perfect for few crepe’s at the breakfast table is:

1 1/2 Cups of Milk

1 Cup of Flour

2 Eggs

A Pinch of Salt and a Tablespoon of Oil.

Mix Ingredients well for a smooth liquidy texture. Try to avoid a lumpy batch.  Add milk if it’s too thick and flour if its to liquidy.  Test run your batter on a flat lightly buttered round pan.

Add eggs, sliced mushrooms, choice of meat bits and veggies for an amazing dish.  I recommend to scramble your eggs first and sautee your veggies separately and mix them once separately cooked.  If you are not a mushroom fan, this dish is sure to change your mind.

Orange Cranberry Nut Bread

  • 2 cups flour
  • 3/4 cup granulated sugar
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup coarsely chopped nuts(walnuts or pecans)
  • 1 cup chopped cranberries
  • 3/4 cup orange juice
  • 1/2 cup butter, melted
  • 2 eggs, beaten
  • 1 Tbsp grated orange peel

Method

1. Pre-heat oven to 350°F.

2. Mix the flour, baking powder, baking soda, and salt in a large mixing bowl. Add the chopped cranberries and walnuts to coat with the flour mixture.

3. Mix together orange juice, sugar, butter, and egg. Add to flour, cranberry, nut mixture and stir with a wooden spoon until just blended.

4. Pour into a greased 9×5 or 8×4 loaf pan. Bake at 350°F for 55 to 60 minutes or until done (a toothpick inserted into the center comes out clean).

5. Cool in pan for 10 minutes. Remove from pan and cool on a wire rack.

Serves 10.

Warm Cheese and Mushroom Toast

Here at the Guest House, we are not only baking cake or pastry but also we cook a special dish every morning. Today, we propose you the Cheese and Mushroom toast:

2 Tbs. unsalted butter
1 large shallot, finely diced (about 1/4 cup)
Kosher salt
10 oz. mixed mushrooms (like shiitake, cremini, and oyster), trimmed and thinly sliced
Sixteen 1/2-inch slices baguette, cut on a sharp diagonal so they’re about 3 inches long
1-1/2 cups grated Gruyère (about 4 oz.)

Melt the butter in a large heavy-duty skillet over medium heat. Add the shallot, season with 1/2 tsp. salt, and cook, stirring, until softened, about 3 minutes. Raise the heat to high, add the mushrooms and another 1/2 tsp. salt, and cook, stirring frequently, until softened and browned, 3 to 5 minutes longer.

Set an oven rack about 8 inches away from the broiler element and heat the broiler to high. Arrange the bread slices on a large rimmed baking sheet. Broil until lightly toasted, 2 to 4 minutes, rotating the pan as needed for even toasting. Flip the bread, mound a heaping tablespoon of the mushrooms on each piece, and sprinkle with the Gruyère. Broil until the cheese is melted and lightly browned, 4 to 7 minutes. Serve immediately.

Make Ahead Tips

You can sauté the mushrooms, cool to room temperature and refrigerate, tightly wrapped, for up to 1 day. Bring to room temperature before using.

Iced Strawberry Cream Cheese Pound Cake

Here is a great quick idea for a strawberry creation you can impress your friends with:

Cake Ingredients:

2 Cups of Fresh Diced strawberries

1 3/4 Cups of All Purpose Flour, Sifted

1/2 Tsp Baking Powder

1/2 Cup of Butter

4 oz. of cream cheese

1 1/2 cups of sugar

1/2 tsp of vanilla

3 eggs

1/2 cup of milk

Preheat Oven to 325 Degrees.

Sift FLOUR and BAKING POWDER in a medium bowl together first, and set bowl aside

Using a mixer; Cream Butter, Cream Cheese, and Sugar for about 6 minutes

Add eggs, one at a time, mixing well after each addition

Add vanilla and milk until combined.

Next, add flour mixture until completely combined.

Finally, add your strawberries and bake in a 9 x 5 greased pan for 60 minutes

For the Icing you will need:

3 oz. of cream cheese

1 1/2 tsp of butter

1 3/4 cups of powdered sugar

2 tsp of milk

Cream butter and cream cheese together.  Add sugar and milk until thoroughly combined. Spread on top of cake generously.

Croque Madame at the Guest House

At the American Guest House Bed and Breakfast, we enjoy and love cooking! And more than everything, we LOVE sharing our favorite recipes with you! Tomorrow morning , our guests will try the croque Madame…

Croque madame is a “variation” of the Croque Monsieur (originated in France) which is a hot ham and cheese ( emmental or gruyère) grilled sandwich but with a fried egg or poached egg on top… And better it’s coated on Bechamel sauce!

Here is the recipe for 4 sandwiches (15 minutes to prepare):

Ingredients

  • 8 slices whole wheat bread
  • 8 slices of  Gruyere, very thinly sliced
  • 8 slices of  ham, very thinly sliced
  • 1 tablespoon unsalted butter
  • 4 extra-large eggs
  • Salt and pepper

Directions

Preheat oven to 400 degrees F.

Butter 1 side of each bread slice.

First toast your bread with a toaster (30 seconds) or in the oven (5 minutes).

When it’s done put 1 slice of the ham over the cheese, and place the top slice of bread over the ham, buttered side up.  Heat griddle or skillet over medium heat. Cook sandwiches until bottom is golden brown and cheese is melted, about 3 minutes per side.

And then place a slice of cheese on top ! Put the sandwiches back onto the griddle or skillet then place in oven, cooking until golden brown and cheese is melted, about 5 minutes.

Cook each egg sunny side up and place 1 fried egg atop each sandwich.  Suggestion: add Bechamel sauce inside your sandwiches.

Cinnamon topped Oatmeal Muffins at the Guest House

Every morning our guests wake up with the smell of home made baking prepared in our kitchen. Tomorrow, our guests will try some delicious Cinnamon topped Oatmeal Muffins.

Here is our recipe:

Muffins:

1 1/2 cup of flour
1 cup sugar
3 tsp baking powder
1/2 tsp salt
1/2 cup oatmeal
1/3 cup oil
2 eggs, beaten
1 cup milk

Topping:

2 tbsp brown sugar
2 tbsp cinnamon
1 tbsp melted butter

DIRECTIONS FOR MUFFINS:

Preheat oven to 350 degrees.

Put muffin papers in the muffin pan. Measure 2 cups of flour and put into sifter. Measure and add baking powder and salt.

Sift dry ingredients together into a mixing bowl. Stir in oatmeal.

Measure oil & put in another mixing bowl. Measure milk & add to second bowl. Break egg and beat with fork. Add to second bowl & mix all liquids together. Combine all ingredients and stir until ingredients are moistened. Fill muffin papers 2/3 full.

DIRECTIONS FOR TOPPING:

Measure and mix together brown sugar, flour, cinnamon, melted butter Place butter in a glass measuring cup and microwave for 10 seconds (easy way).

Sprinkle muffins with topping and bake for 15 minutes.

Bluberry Cake at the Guest House

One of my favorite cake recipes!

INGREDIENTS:

2 cups all purpose flour, sifted
1 cup granulated sugar
3 tsp baking powder
2 tsp vanilla
1/2 cup buttermilk
2 eggs
1/2 cup vegetable oil
1 pt blue berries
Confectioners sugar (for dusting top of cake)

INSTRUCTIONS:

Preheat oven to 350 degrees F. Butter and flour a 9″ round cake pan.

Sift the dry ingredients into a large bowl, toss blueberries in flour mixture to prevent from sinking to the bottom of the cake. In medium bowl, whisk eggs then add vanilla and oil until mixture is completely blended. Mix wet and dry ingredients until just combined, do not over mix. Be careful with the blueberries when combining the dry and wet ingredients.

Pour mixture into the prepared cake pan. Bake for 35-40 minutes, depending on your oven. Cake is done when a toothpick comes out clean when inserted into the cake. Allow cake to cool in pan for 10 minutes before gently removing from pan and placing on a wire rack to cool completely.

Cranberry Nut Bread

Moist and delicious Cranberry Nut Bread with chopped cranberries, walnuts, and hints of orange!

  • 2 cups flour

  • 1/2 teaspoon salt
