Blueberry Ricotta Pancakes           
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 1/2 tablespoons sugar
4 tablespoons melted butter
1/2 cup ricotta cheese
1 large egg
1/2 cup orange juice
1/3 cup milk
1/2 teaspoon vanilla extract
3/4 cup blueberries
1 to 2 teaspoons grated orange zest
Cooking spray

Combine the flour, baking powder, soda, salt and sugar in a medium bowl. In a different bowl, whisk together the ricotta, butter, egg, juice, vanilla, zest and milk.  Combine the wet and dry ingredients just until blended.

In a griddle, spay light coating of cooking spray.  Spoon 1/2 cup of batter onto the hot cooking surface, drop 3 or 4 blueberries onto the individual pancakes.  Flip over when bottom side is brown approximately 20 seconds top with pat of butter and/or powdered sugar.
