Blueberry Cake Recipe! Perfect for a Sunday Afternoon Dessert!

One of the great breakfast features we offer is our homemade pastries and cakes.  Our guests have always complimented us on them and we take pride in using the finest ingredients and that extra American Guest House touch.  Below is our recipe that we would like to offer our guests so that you can always have a piece of us to share with your folks at home!

The Blueberry cake is one of my favorites!


1 1/12 cups of Sugar

1/2 cup of butter

3 oz of cream cheese

3 eggs

1 1/2 cups of flour

1 tsp of baking soda

1/2 tsp of salt

1/2 cup of milk

1 tsp of vanilla extract

1/2 cup of blueberries (fresh)

The combination and mixing of these ingredients is key.  Pre-Heat Stove to 325 degrees F. Thoroughly mix the Sugar and Butter together and then add in the Cream Cheese.  Separate the yolk from the egg white and add in only the EGG YOLK one at a time into the batter.  After mixing your batter, take the Flour, Salt and Baking Soda and sift these ingredients separately.  After the dry ingredients have been sifted, add the batter (Sugar, Cream Cheese and Egg Yolks) into the Flour mixture.  Slowly mix these together, gracefully adding the Milk and Vanilla into the mixture.  Next add the egg whites and mix but do not over mix.  Just enough so that the egg whites blend into the mixture.  Finally add the Blueberries and mix slowly with a spatula.   Place mixture into a greased 9×5 baking pan into your stove.  Bake until golden brown and enjoy!!
