Bluberry Cake at the Guest House

One of my favorite cake recipes!

INGREDIENTS:

2 cups all purpose flour, sifted
1 cup granulated sugar
3 tsp baking powder
2 tsp vanilla
1/2 cup buttermilk
2 eggs
1/2 cup vegetable oil
1 pt blue berries
Confectioners sugar (for dusting top of cake)

INSTRUCTIONS:

Preheat oven to 350 degrees F. Butter and flour a 9″ round cake pan.

Sift the dry ingredients into a large bowl, toss blueberries in flour mixture to prevent from sinking to the bottom of the cake. In medium bowl, whisk eggs then add vanilla and oil until mixture is completely blended. Mix wet and dry ingredients until just combined, do not over mix. Be careful with the blueberries when combining the dry and wet ingredients.

Pour mixture into the prepared cake pan. Bake for 35-40 minutes, depending on your oven. Cake is done when a toothpick comes out clean when inserted into the cake. Allow cake to cool in pan for 10 minutes before gently removing from pan and placing on a wire rack to cool completely.

Washington DC Restaurants

Have you tried the food at Eatonville in DC?

The U st Corridor is historically famous for their local eatery spots. I came across one restaurant that reminded me of my southern roots. Eatonville is located at 2121 14th st NW, Washington, DC 20010. The atmosphere is low-key, eclectic and inviting where tea comes served in mason jars. The menu is a modern twist on southern classics like “fried green tomatoes”. I recommend the duck salad and a house favorite for all, baked macaroni and cheese. To my delight the duck was perfectly cooked, seasoned well and sliced thick enough to complement the fresh wild lettuce. The mac and cheese was a great addition to the duck. I would recommend this restaurant to anyone looking for a good bite to eat on U st.

Cranberry Nut Bread

Moist and delicious Cranberry Nut Bread with chopped cranberries, walnuts, and hints of orange!

  • 2 cups flour
  • 1 cup granulated sugar
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup coarsely chopped walnuts
  • 1 cup chopped cranberries
  • 3/4 cup orange juice
  • 1/4 cup butter, melted
  • 1 egg, beaten
  • 1 Tbsp grated orange peel

Method

1 Pre-heat oven to 350°F.

2 Mix the flour, baking powder, baking soda, and salt in a large mixing bowl. Add the chopped cranberries and walnuts to coat with the flour mixture.

3 Mix together orange juice, sugar, butter, egg, and orange peel. Add to flour, cranberry, nut mixture and stir with a wooden spoon until just blended.

4 Pour into a greased 9×5 or 8×4 loaf pan. Bake at 350°F for 55 to 60 minutes or until done (a toothpick inserted into the center comes out clean).

5 Cool in pan for 10 minutes. Remove from pan and cool on a wire rack.

Serves 8.

Christmas in Georgetown Washington, DC

Its Christmas in Georgetown! Located just west of the National Mall is the historic area of Georgetown, DC. Home to some of the oldest buildings, great food and plenty of shops, there is never a dull moment to spend some time here. From December 9th-20th, 2011, Georgetown will host the “12 Days of Merriment”, which is full of holiday promotions, contests and activities.

Getting to Georgetown is fairly simple which is located right of the Foggy Bottom metro station, or a small taxi ride from DuPont Circle.

White Cake at the Guest House

Try this American Guest House Favorite at home. The recipe is super easy, moist and delicious.

Ingredients                                       

  • 1 cup white sugar
  • 1/2 cup butter
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×9 inch pan or line a muffin pan with paper liners.
  2. In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Finally stir in the milk until batter is smooth. Pour or spoon batter into the prepared pan.
  3. Bake for 30 to 40 minutes in the preheated oven. For cupcakes, bake 20 to 25 minutes. Cake is done when it springs back to the touch.

Washington DC Museums

Unites States Holocaust Memorial Museum

The Unites States Holocaust Memorial Museum displays many interesting exhibits related to the Holocaust. The admission is free and most exhibits do not require special passes. Exhibits include the permanent exhibit, “The Holocaust”. This exhibit is divided into three parts, and the suggested age for viewing is 11 years and up due to the content. This exhibit requires special passes during the spring and summer months. Passes are given on a first come first served basis at the museum in person. The option to purchase tickets ahead of time is available online for $1.00 per person. “Remember the Children: Daniel’s Story” is an exhibition with the purpose of conveying the story of  the Holocaust so that young children can understand.

The Holocaust Museum is located near the Washington Monument on the mall and in close proximity to the Smithsonian museums. The metro stop located just 1 block away from the museum is the Smithsonian metro stop on the blue and orange lines.

Washington DC Activities

The Torpedo Factory Art Center

The Torpedo Factory Art Center is located at the seaport in the Old Town section of Alexandria, VA. The Torpedo factory contains 82 studios and 6 galleries where independent artists display their work. Admission to the Art Center is free.

The Torpedo Factory is accessible by the King Street metro station which  is serviced by the blue and yellow lines. The King Street Trolley services the metro station on a fixed schedule every 20 minutes.

A more scenic option is to take the Potomac Riverboat Company’s Washington monument tour from Washington Harbor to the Seaport in Old Town Alexandria, VA. The waterfront has a lovely board walk and often live music playing on the board walk.
